Polysaccharides and polyphenols coexist in many plant-based food products. Polyphenol-polysaccharide interactions may affect the physicochemical, functional, physiological properties, such as digestibility, bioavailability, stability, of foods. In this review, (physically or covalently linked) between selected polysaccharides are summarized. The preparation structural characterization polyphenol-polysaccharide conjugates, their structural-interaction relationships, effects on functional properties polyphenol polysaccharide molecules reviewed.
