Polysaccharides and polyphenols coexist in many plant-based food products. Polyphenol-polysaccharide interactions may affect the physicochemical, functional, physiological properties, such as digestibility, bioavailability, stability, of foods. In this review, (physically or covalently linked) between selected polysaccharides are summarized. The preparation structural characterization polyphenol-polysaccharide conjugates, their structural-interaction relationships, effects on functional properties polyphenol polysaccharide molecules reviewed. Moreover, potential applications conjugates discussed. This review aids a comprehensive understanding synthetic strategy, beneficial bioactivity, application complexes.

Oxidative stress is a biochemical process that disrupts the redox balance due to an excess of oxidized substances within cell. closely associated with multitude diseases and health issues, including cancer, diabetes, cardiovascular diseases, neurodegenerative disorders, inflammatory conditions, aging. Therefore, developing antioxidant treatment strategies has emerged as pivotal area medical research. Hydrogels have garnered considerable attention their exceptional biocompatibility, adjustable physicochemical properties, capabilities for drug delivery. Numerous hydrogels been developed proven effective in alleviating oxidative stress. In pursuit more treatments stress-related there urgent need advanced fabrication multifunctional hydrogels. Consequently, authors' focus will be on possess reactive oxygen species nitrogen scavenging capabilities, role therapy evaluated.
