Mushrooms are known to be a nutritional powerhouse, offering diverse bioactive compounds that promote and enhance health. provide distinguishable taste aroma an essential source of vitamin D2, B complex, hydroxybenzoic acids (HBAs) hydroxycinnamic (HCAs), terpenes, sterols, β-glucans. Edible mushroom varieties such as Hericium erinaceus, Ganoderma sp., Lentinula edodes recognized functional foods due their remarkable potential for disease prevention promotion overall health well-being. These have antioxidants, anti-inflammatory, cytoprotective, cholesterol-lowering, antidiabetic, antimicrobial, anticancer properties, well controlling blood pressure, being immunity booster, strengthening bone properties. In addition, they contain non-digestible oligosaccharides (NDOs) ergothioneine, substrate gut microflora. Supplementing our daily meals with those can add value food, providing benefits. Novel edible mushrooms investigated explore substances therapeutic benefit human The scientific community (mycologists) is currently studying the prospects unlocking full advantages mushrooms. This review aims knowledge culturing conditions, potential, value-added products 11 varieties.

Ganoderma, a genus of mushrooms known for its long history medicinal use, has gained increasing attention in recent years due to potential health benefits. This review delves into the bioactive compounds found Ganoderma and elucidates intricate mechanisms underlying immunomodulatory anti-tumour activities. The diverse health-promoting effects can be attributed decadent array compounds, notably polysaccharides, triterpenoids, which play pivotal role. ability mushroom modulate immune system, enhancing activity cells, such as natural killer cells macrophages, is central focus. Furthermore, we explore how exerts through induction apoptosis, inhibition angiogenesis, interference with various signalling pathways critical cancer cell growth metastasis. As research this area continues evolve, comprehensive understanding supplement role promoting well-being emerging, offering promising avenues further investigation application healthcare.

The nutritional properties of Pleurotus mushrooms were studied to select the varieties with most favourable properties. These have high value; they are rich in carbohydrates, protein, minerals, vitamins, chitin and reducing compounds, such as phenols polyphenols. In this study, polyphenol profiles thirteen ostreatus cultivars established by UHPLC-ESI-MS/MS technique. results showed that 4-hydroxibenzoic acid, caffeic p-coumaric acid vanillic abundant polyphenolic components samples. addition, Fourier-transformed near infrared (FT-NIR) spectra samples recorded evaluated. correlation between differences NIR patterns was investigated. subjected several statistical evaluations (Kruskal–Wallis test, Principal Component Analysis (PCA), Spearman analysis, cluster analysis) detect possible Relationships profile antioxidant capacity (FRAP), total content (TPC), free amino (fAA) values each component examined. Based on results, an effort made group according attributes tested.

In humans, exogenous antioxidants aid the endogenous antioxidant system to detoxify excess ROS generated during oxidative stress, thereby protecting body against various diseases and stressful conditions. The majority of natural available on consumer market are plant-based; however, fungi being recognized as alternative sources such polysaccharides, pigments, peptides, sterols, phenolics, alkaloids, flavonoids. addition, some exclusively found in fungi. Fungi-derived exhibit scavenging activities DPPH, ABTS, hydroxyl, superoxide, hydrogen peroxide, nitric oxide radicals vitro. Furthermore, vivo models, application fungal-derived increase level enzymes, catalases, superoxide dismutases, glutathione peroxidases, reduce malondialdehyde. Therefore, fungi-derived have potential be used food, cosmetic, pharmaceutical industries. This review summarizes different (mushrooms, yeasts, molds)-derived compounds ergothioneine, ergosterol, etc.

Several medicinal mushrooms have been approved as European Novel Foods or the potential to become Foods. However, their chemical characterization is limited, being mainly focused on specific compounds. Here, dehydrated mycelia (isolated from sporophores collected in Italy) of Grifola frondosa, Hericium erinaceus, recently defined Foods, and Cordyceps militaris Laricifomes officinalis, with Food use, were analyzed by NMR methodology define metabolite nutritional profile. Amino acids derivatives, sugars polyols, organic acids, fatty lipid polar moieties, nitrogen-containing compounds identified quantified hydroalcoholic extracts. C. showed a high amount glutamate, citrate mannitol, also involved mushroom taste, only species presenting tri-unsaturated acids. L. officinalis was characterized highest TAA EAA, lowest polyols content. G. frondosa H. erinaceus amounts trehalose (13-14 % dried weight). Each potentially represents an innovative food matrix alone, for culinary, nutraceutical needs, mixed together obtain new products. Moreover, these can be interest sources isolated bioactive supplements particular functions.
