Several medicinal mushrooms have been approved as European Novel Foods or the potential to become Foods. However, their chemical characterization is limited, being mainly focused on specific compounds. Here, dehydrated mycelia (isolated from sporophores collected in Italy) of Grifola frondosa, Hericium erinaceus, recently defined Foods, and Cordyceps militaris Laricifomes officinalis, with Food use, were analyzed by NMR methodology define metabolite nutritional profile. Amino acids derivatives, sugars polyols, organic acids, fatty lipid polar moieties, nitrogen-containing compounds identified quantified hydroalcoholic extracts. C. showed a high amount glutamate, citrate mannitol, also involved mushroom taste, only species presenting tri-unsaturated acids. L. officinalis was characterized highest TAA EAA, lowest polyols content. G. frondosa H. erinaceus amounts trehalose (13-14 % dried weight).
