Abstract This research paper presents the characterization of an enterocin-producing Enterococcus durans MF5 isolate and determination in vitro antilisterial activity enterocin produced by this isolate, named Ent-MF5. Listeria monocytogenes is a foodborne pathogen exhibiting high mortality rate. In addition to the robust tolerance environmental stress, ability of L. develop biofilms increases risk contaminating food processing facilities and ultimately foods. This study aims synergistic approach better control using nisin, only bacteriocin approved as preservative, in combination with gallic-acid-rich plant extracts. Biofilm assays presence nisin gallic acid or its derivatives revealed that significantly decreased level biofilm formation monocytogenes, whereas ethyl gallate, propyl lauryl gallate enhanced production. As widely distributed plants, we examined whether extracts from such clove, chestnut, oregano, sage, may generate similar antibiofilm effects. Remarkably, sage activity against monocytogenes; however, other tested increased formation, particularly at concentrations. Moreover, combinations reduced on stainless steel. Sage common spice has various beneficial health effects, including antioxidation anti-cancer properties. The findings this demonstrate can be potentially combined prevent production monocytogenes.
