Introducción: El creciente aumento de casos enfermedades crónicas no transmisibles en el mundo está asociado a la malnutrición, un problema salud pública que es influenciado por los conocimientos deficientes educación alimentaria y nutrición marketing publicitario. En actualidad ingesta alimentos ultraprocesados, las prácticas saludables alimentación poca actividad física influyen manera negativa estado nutricional. Objetivo: Identificar relación entre nutricional consumo ultraprocesados adultos beneficiarios ollas comunes Lima - Perú. Material métodos: estudio corte transversal, con una muestra 158 varones mujeres Ollas Comunes, se diseñó aplicó cuestionario cinco dimensiones. análisis estadístico fue Chi cuadrado. Resultados: tiene (p=0.048). Asimismo, si existe circunferencia cintura (p=0.027) según edad (p=0.001). Conclusiones: Existe Es importante desarrollar actividades para prevención del sobrepeso obesidad sobre consecuencias lo cual puede desencadenar al consumir productos ultraprocesados.

We conducted an epidemiological non-interventional cross-sectional and case-control study from 1 January 2023 until 26 May in Oltenia region, southwestern Romania. Throughout the research, 160 consecutive patients were included two different clinical departments (1—Pneumology; 2—Diabetes Nutritional Diseases). Background: Diet and lifestyle play important roles in preventing improving chronic diseases, evaluating behavioral risk factors these pathologies allows for efficient management. Background: The long-term consumption of junk food products can lead to nutritional and metabolic imbalances, especially when it is associated with a lack physical activity the alcohol or other high-calorie products. Methods: evaluation among teenagers young people in Romania was carried out help cross-sectional study based on questionnaire. Results: A total number 1017 respondents participated this study, comprising 470 males 547 females aged between 16 25 years. Background: Adolescence is a pivotal developmental stage marked by physiological and behavioral changes that significantly influence dietary habits long-term health outcomes. Objectives: This study aimed to examine the associations between socio-demographic characteristics, psychological factors, behaviors among school-aged children adolescents in Romania. Methods: A cross-sectional was conducted using structured, self-administered questionnaire completed 662 aged 6 18 years, enrolled primary, middle, high schools across urban rural areas. The evaluated nutritional intake, meal patterns, hydration habits, physical activity, screen time, factors such as fatigue, stress, mood fluctuations. Body mass index (BMI) calculated based on self-reported height weight. Results: analysis reveals significant gender differences body (BMI), weight-loss behaviors, family structure. Female were more likely be underweight (18.27%) compared male (10.82%), while overweight prevalence higher (18.66%) than female (11.68%) (χ2 = 11.457, p 0.009). Dietary patterns varied age groups, with high-school-aged demonstrating lower vegetable consumption increased autonomy over food choices. Primary school exhibited intake of carbonated beverages (OR 0.185, 0.002 for school; OR 0.116, < 0.001 middle school), whereas teenagers showed preference structured meals fast-food intake. The aim of this study was to obtain low fat mayonnaise-like emulsion gels using sesame cake and walnut by-products resulting from vegetable oil extraction. ingredients used formulate the mayonnaise like gel samples were corn starch, seed (SSC), walnuts (WSC), lemon juice, sunflower oil, mustard, sugar, salt, gelatin water. Five different prepared: one control lab sample (M) containing only starch other (without SSC WSC), two (SO1 SO2) with 2 4% WSC) (WO1 WO2) WSC SSC). Also, an egg-free commercial (CM) purchased for comparison. Physicochemical (fat, protein, moisture, ash, carbohydrate, water activity, stability, viscosity, density color), textural (hardness, adhesiveness, springiness, cohesiveness, gumminess chewiness), sensory (aspect, color, texture/firmness, flavor, taste acceptability) attributes all investigated. results showed that carbohydrate content decreased in four cakes compared sample, while protein increased samples, largest increases observed samples.
