Results showed powder differed pectin, lipid, protein, crude fiber, total phenol contents. all exhibited yellow color, 117.73–152.45 μm thickness, 16.39–23.62% moisture content, 26.03–90.75° water contact angle, 5.38–8.31 × 10−11 g m−1 s−1 Pa−1 vapor permeability, 5.26–12.91 10−20 m2 oxygen 4.87–7.90 MPa tensile strength, 13.37–24.62% elongation at break. Notably, containing with high pectin lipid contents moisture/oxygen barrier ability mechanical properties. content antioxidant- antimicrobial-releasing abilities delaying oxidation. Overall, results suggested have application potential packaging.

Abstract A remarkable one‐third of global food production is wasted, resulting in significant economic damage and escalating insecurity. To address this sustainability challenge, freshness identification packaging using intelligent materials has gained traction. This work introduces a chitosan‐ graft ‐gelatin (CS‐g‐GEL) hydrogel, incorporating pH‐responsive dye, bromothymol blue (BTB), as colorimetric indicator to monitor the spoilage chicken breasts. The successful formulation hydrogels verified FTIR, AFM, SEM, TGA, 1 HNMR characterization techniques.
