A kind of novel polysaccharides from Chinese yam (Dioscorea opposita Thunb.) was prepared by fermentation with a fungal probiotic Saccharomyces boulardii. The preparation methods and parameters fermented (FCYP) were optimized. Molecular weight FT-IR spectrum the optimized FCYP also evaluated, along its biological activities digestion behaviors. Results showed that distributed in supernatant possessed best total reducing power. On this basis, highly active obtained under optimal conditions: time 36 h, inoculation volume 6% solid-liquid ratio 1:25 g/mL. Chinese yam polysaccharide (CYP) has received attention in recent years owing to its positive nutritional and medicinal characteristics.
