Jaboticaba
is
a
tropical
plant
and
its
fruit
rich
in
nutrients,
volatile
compounds,
biological
activities,
which
considered
to
be
an
edible
health
benefits
plant.
Despite
popularity
for
fresh
consumption,
jaboticaba
rarely
used
intensive
processing
China.
The
content
of
nutrients
antioxidant
greatly
impacts
how
it
processed
healthy

this
study,

evaluated
the
capacity,

cultivars
including
Sabara,
