The phenolic compounds are accepted as supporting human health against various vital diseases. Fruits one of the main sources to be consumed, and apricot is most important fruits in terms compound profile. This study was conducted compare profiles cultivars at different maturity levels. For this aim, four Turkish cultivars—two which consumed fresh while other two suitable for drying—were selected harvested levels: harvest commercial maturity. obtained samples, including eight compounds, were analyzed by high performance liquid chromatography (HPLC). data statistically evaluated, correlation analyses performed Results showed that when some increase higher levels, them decrease do not show a significant difference. change during ripening varies depending on cultivar. Similarly, correlations among occur differently levels cultivars. In total amount examined part study, three lower contents maturity, drying purposes more than 40% both 'Hacıhaliloğlu' cultivar particular but also 'Kabaaşı' found advantageous contents.

Jaboticaba is a tropical plant and its fruit rich in nutrients, volatile compounds, biological activities, which considered to be an edible health benefits plant. Despite popularity for fresh consumption, jaboticaba rarely used intensive processing China. The content of nutrients antioxidant greatly impacts how it processed healthy food. In this study, we evaluated the capacity, compounds three cultivars including Sabara, Argentina, Fukuoka, respectively. Our results revealed each variety has merits. Sabara had abundance suitable acid-sugar ratio, slightly lower making consumption. Argentina richest ripe fruit, but lighter taste dry products. large size, juicy flesh, low less Fukuoka also make juice processing. Three berry exhibited different characteristics, providing reference evidence manufacturing
