Abstract The confectionery industry is increasingly adopting new solutions and possible formulations to expand the ranges of chocolate products that support food styles linked either cultural or health choices. chemical-physical characteristics chocolates (dark milk) produced with traditional intended for vegan demanding less simple sugars consumers (with a 10% reduction in calorific value), were analysed. effects substitution milk coconut copra, almond isolated soy proteins, replacement sucrose sugars, stevia erythritol, have been accounted by analysing texture, rheology water activity, differential scanning calorimetry (DSC) fast field cycling (FFC) nuclear magnetic resonance (NMR) relaxometry. plant-based sample showed lower values hardness adhesiveness texture analysis, larger peak melting behaviour at DSC. Moreover, powder caused more than halving yield stress similar decrease apparent Casson viscosity. crystallisation cocoa butter substituted-sugar involved β V form, most desirable crystal form high-quality chocolate. Results FFC NMR relaxometry allowed identification differently sized aggregates whose chemical nature discussed. data confirm those rheological DSC investigations.

Nonalcoholic fatty liver disease (NAFLD) is a stress-induced injury related to heredity, environmental exposure and the gut microbiome metabolism. Short-chain acids (SCFAs), metabolites of microbiota (GM), participate in regulation hepatic steatosis inflammation through gut-liver axis, which play an important role alleviation NAFLD. However, little progress has been made systematically elucidating mechanism how SCFAs improve NAFLD, especially epigenetic mechanisms potential therapeutic application as clinical treatment for Herein, we adopted PubMed Medline search relevant keywords such 'SCFAs', 'NAFLD', 'gut microbiota', 'Epigenetic', 'diet', 'prebiotic effect' review latest research on NAFLD up November 2023. In this review, firstly, specifically discussed production function SCFAs, well their crosstalk coordination axis. Secondly, provided updated summary intensive discussion affect alleviate from perspective genetic epigenetic. Thirdly, paid attention pharmacological physiological characteristics proposed promising future direction adopt alone or combination with prebiotics drugs prevent treat Together, aimed elucidate provide new insights prospects target

Monosaccharide composition analysis is essential to the structural characterization and research into biological activity of polysaccharides. In this study, a systematic comparison was performed among commonly used monosaccharide methods, including colorimetric chromatographic methods. These were tested on 16 aldoses, ketoses, alditols, amino sugars, uronic acids. Furthermore, effect hydrolysis methods also investigated. The results showed that phenol sulfuric acid method greatly affected by type as reference substance. determination using carbazole less neutral sugars than m-hydroxybiphenyl. high-performance thin-layer chromatography (HPTLC) can simultaneously analyze multiple samples accurately determine acid. High-performance liquid (HPLC) provide good qualitative quantitative aldose, acids, while gas chromatography–mass spectrometry (GC-MS) detect ketose, alditols. Fructose detected in large amount inulin Codonopsis pilosula after one-step hydrolysis, it totally destroyed two-step hydrolysis. release galacturonic significantly increased pectin Lycium barbarum, which indicated not enough for acidic study are beneficial selecting appropriate order compositions natural

Liver diseases are a serious health problem worldwide, especially with sustained increase in the burden of it every year. However, drugs commonly used patients have limited efficacy and adverse reactions associated long-term use. Therefore, is urgent to find effective safe alternatives. Polysaccharides currently considered promising alternatives traditional because their extensive activity low toxicity. This review investigated studies on hepatoprotective polysaccharides over past 6 years, detailing effects, potential mechanisms, drug carrier applications. These findings suggest that prominent preventive therapeutic effects various liver such as drug-induced injury, alcoholic disease, hepatitis B, non-alcoholic fatty fibrosis, hepatocellular carcinoma. Its mechanism includes multiple aspects metabolic regulation, reduction oxidative stress inflammation, regulation gut microbiota. Furthermore, owing good physicochemical properties, been applied delivery systems for chemotherapy small molecule drugs. further research essential bioavailability, structure-activity relationship, more clinical evidence polysaccharides. Continued exploration will provide tremendous treatment diseases.
