Thermal processing of food plays a fundamental role in everyday life. Whereas most researchers study thermal processes directly the matrix, molecular information form non- and semivolatile compounds conveyed by vaporous emissions is often neglected. We performed metabolomics from 96 different items to define interaction between processed matrix released metabolites. Uncertain chemical mechanisms leading to brown carbon (BrC) formation affect the drivers of radiative effects aerosols in current climate predictions. Secondary brown carbon is an important component of the atmosphere. The contribution secondary atmospheric from reaction methylglyoxal (MG) with ammonium sulfate (AS) has been demonstrated in laboratory. Air quality in rural areas results from the crossing of aged air masses transported urban with local emissions dominated by agriculture and vegetation.
