This study aims to evaluate the drying kinetics of basil leaves using microwave-assisted (MAD) determine moisture content, ratio, rate, and economic analysis at various microwave power levels (136, 264, 440, 616 W). discusses between versus oven this has not been discussed in other studies. The are: 2.83±0.1831 × 1.42±0.1398 cm (small leaves); 4.08±0.1619 1.83±0.1059 (medium 6.16±0.1713 2.70±0.2357 (large leaves). They evaluated each condition five thin layer models: Henderson Pabis, Midilli et al., Hii Verma Diffusion Approximation. Coffcient correlation (R2), Chi-square (X2), Sum Square Error (SSE), Root Mean (RMSE), (MSE) were used as statistical parameters best model. results show that al. model is most appropriate. An was conducted selected optimum conditions from previous research results. Using 17 microwaves resulted a Rate Investment (ROI) 46.9188%, Break Even Point (BEP) 37.1189%, interest rate (i) 0.0094%. While ovens an ROI calculation 30.5957%, BEP 43.6197%, 0.0465%. Thus more than drying. expected be useful for industry or further food science industry.
