The focus of people on the yield aquatic products has gradually shifted to superior quality. Astaxanthin is well‐known for its antioxidant capacity, while research regulatory effect muscle quality limited. This study aims investigate whether dietary Phaffia rhodozyma ‐synthesized 3S, 3′S‐astaxanthin (L‐AST) could promote body coloration and Litopenaeus vannamei . Experimental diets with L‐AST levels 0, 30, 60, 90 mg/kg were fed L. (IBW: 2.72 ± 0.03 g) 8 weeks. results revealed that shrimp presented better decreased L ∗ values whereas increased a possessed higher astaxanthin. Dietary supplementation 60 significantly enhanced texture (hardness, chewiness, resilience, gumminess), which be attributed an increase in alkaline‐insoluble collagen content decrease myofiber diameter. Interestingly, or markedly glycine (a sweet amino acid) total flavor acid (glutamic acid, aspartate, alanine, glycine). Further showed improved free fatty profile by increasing contents some monounsaturated acids (C17:1n7, C18:1n9t C24:1n9) polyunsaturated (C20:02 C22:6n3). Taken together, P. considerably promoted promoting histological properties, elevating improving acids.
