Prolamins, proteins derived from plants, have extensive applications in pharmaceutics and food science. Jiuzao is a byproduct of the Baijiu brewing industry, great source prolamin. Despite its importance, knowledge regarding extraction techniques properties prolamin (PBJ) remains limited. Reverse micelles (RMs) offers an efficient cost-effective method for purifying proteins. In present study, was extracted using RMs subsequently characterized terms secondary structure, morphology, particle size distribution. Our findings indicate that purified further possessed higher α-helix content (+13.25%), forming large-scale protein network, narrower distributions compared to crude obtained by NaOH-ethanol method. This research suggests has potential extracting industry byproducts, offering environmentally friendly approach recycling.
