Today, smart indicators especially based on pigments and natural biopolymers have developed significantly in laboratory industrial scale. In addition to tracking the freshness spoilage of product, these intelligent systems inform consumer about quality packaged product without opening package. On other hand, they reduce food waste minimize poisoning. this study, two halochromic were constructed by encapsulating saffron petal barberry anthocyanins gelatin/chitin nanofiber films for indication freshness/spoilage fish fillets. Insights into molecular, structural, optical properties obtained using X-ray diffraction, scanning electron microscopy, infrared spectroscopy, colorimetry analyses. The results showed that had smooth surfaces evenly distributed throughout biopolymer network. anthocyanin solutions underwent color changes from reddish yellow pink violet greenish after being exposed different pH values (1–14). change appearance was quantified measuring their coordinates (L*, a*, b*). When applied estimating spoilage, G/ChNF/BA G/ChNF/SPA turned green, respectively. After 3 days storage, total volatile basic nitrogen fillets reached 8.0 49.06 mg N/100 g, Therefore, a direct relationship between increase values, bases content, indicator monitor observed. simulation tests pH-responsive can reveal visually real time prior point consumption.

Abstract Inorganic nanoparticles (NPs) and natural antioxidant compounds are an emerging trend in the food industry. Incorporating these substances biobased biodegradable matrices as polysaccharides (e.g., starch, cellulose, chitosan) proteins has highlighted potential active packaging applications due to more significant antimicrobial, antioxidant, UV blocking, oxygen scavenging, water vapor permeability effects, low environmental impact. In recent years, migration of metal NPs oxides contact their toxicological have raised concerns about safety nanomaterials. this review, we provide a comprehensive overview main polymer nanocomposites, inorganic NPs, antioxidants, use packaging. The intrinsic properties actives materials evaluated extend shelf‐life, safety, quality. Toxicological aspects understand current controversy on applying some nanomaterials synergism plant‐derived vitamins, polyphenols, carotenoids) essential oils (EOs) potentiated antibacterial nanocomposite films. Biodegradable films based green NPs—this is biosynthesized from plant extracts–showed suitable mechanical barrier had lower impact offered efficient protection.
