The present work aimed to investigate the antibacterial and antioxidant properties of edible coatings derived from bacterial cellulose composites sourced sago liquid waste garlic, as well their potential for preserving quality tomatoes (Solanum lycopersicum L.). experimental approach involved preparation using a mixture (BC) slurry garlic extract. activities were determined disc diffusion DPPH method, respectively. Subsequently, coated dipping method with different treatments, namely BC/glycerol/CMC/garlic (S1), BC/garlic (S3), beeswax (comparison), uncoated (control). physicochemical assessed, including sensory aspects by ten untrained panellists, weight loss gravimetric analysis, vitamin C content titration pH value on days 0, 5, 10, 15, 20 during shelf life study at room temperature. Results showed that extract applied BC coating possessed properties. containing demonstrated more impact qualities compared ones. Among various S1 exhibited most effective preservation tomato quality. Therefore, addition proved beneficial in augmenting capacity coating, thus leading enhanced maintenance extended tomatoes.
