This paper reviews the published terminology, mathematical models, and possible approaches used to characterise risk of foodborne chemical hazards, particularly pesticides, metals, mycotoxins, acrylamide, polycyclic aromatic hydrocarbons (PAHs). Heavy metal is widespread in food and the environment due to multiple origins, raising concerns over their persistent potential health risks. Contamination of heavy metals tea leaves frequently reported. However, dietary exposure risk that Tieguanyin (a famous type oolong tea,) pose different subpopulations has not been explored. In this study, contaminations five (Cu, Pb, Cr, Cd, Ni) concern were monitored, then related was assessed for six based on brewing experiments a previous consumption survey. Results show mean levels found as follows: 8.18 mg/kg (Cu), 0.84 (Pb), 0.51 (Cr), 0.04 (Cd), 1.90 (Ni), respectively, transfer rates during varied within 10.2-70.4%. All estimated daily intakes individual targeted elements via Tieguanying far below corresponding tolerable limits. The adjusted hazard index value ranged from 1.1 × 10-2 1.7 10-2, indicating these drinking would significant non-cancer risks under current habit. addition, carcinogenic associated with (Pb, Cr) acceptable because no total cancer values exceeded 10-4 threshold. order improve consumer protection, we still suggest considerable attention should be paid Ni, Cd high concentration infusion, extraction rate, major contribution, respectively.
