Proteases as one of the most significant categories commercial enzymes, serve nowadays key ingredients in detergent formulations. Therefore, identifying detergent-compatible proteases with better properties is a continuous exercise. Accordingly, we were interested recombinant production and characterization protease 3075 novel enzyme from thermophilic indigenous Cohnella sp. A01. The human food security is unavoidably dependent on exploring novel nutritional sources, such as edible insects. However, insects farming needs to improve their rearing practices, extracting value from all growing stages, larvae until adults. In this work, a full characterization of larvae, pupae and adults Tenebrio molitor was carried out. Higher protein ash contents were observed in pupae, while higher lipids (mainly polyunsaturated fatty acids, PUFA) decreasing reaching the adult stage. Chitin content 6-fold than pupae. Also, it possible quantify chitin resorting computed 3D tomography, achieving similar values traditional chemically based method. Lower mineral found high iron, zinc copper levels beetles.
