In response to the significant waste of bioresources from passion fruit peels in current market, aiming enhance economic benefits soluble dietary fiber (SDF) derived food industry, this study extracted SDF using six different methods and assessed how these affected its physicochemical properties. The results indicated that acid-assisted extraction method (AAE-1) was most effective at protein removal among methods, had highest yield (17.05%), cation exchange capacity (1.17 mL/g), total monosaccharide content (92.6620 µg/mg), xylose (3.2187 mannose (3.7334 µg/mg). by enzyme-assisted (EAE) showed DPPH free radical scavenging (66.67%), reducing sugar (5.71%), oil-holding (5.86 g/g), glucose (55.9662 alkali-assisted (AAE-2) provided water-holding (7.82 solubility (4.24 rhamnose (3.0854 microwave-assisted (MAE) possessed (20.15%), ABTS (65.46%), ferric ion-reducing (58.83%), galactose (7.8912 hot water-assisted (HWE) arabinose (5.3775 µg/mg) galacturonic acid (35.6795 as well weight-average molecular weight (Mw) number-average (Mn). These findings provide a theoretical foundation for development utilization peels.

Despite its importance, there scarcity of research on the structure and activities these In this study, polysaccharides from (GJPs) were extracted using various methods, including heated reflux extraction (HRE), acidic (ACE), alkaline (AAE), microwave-assisted (MAE), enzymatic (EAE), pressurized liquid (PLE), deep eutectic solvents (DESE). The yield, physicochemical properties, structural characteristics, antioxidant comprehensively investigated compared. Physicochemical analysis, FT-IR spectral features monosaccharide compositions, revealed that GJPs are heteropolysaccharides both α- β-configurations. DESE ACE most effective methods for obtaining highest neutral sugars yields 29.1%/64.2%, 39.8%/55.6%, respectively. Meanwhile, AAE was preferable extracting polysaccharide–protein complex, achieving yield 14.21% exhibiting superior thermal stability. particular, PLE showed best homogeneity distinct molecular weights 39.5 kDa 17.6 kDa, addition, biological evaluation indicated MAE exhibited relatively stronger as evidenced by DPPH ABTS assays. To upgrade the utilization of Syzygium samarangense in food industries, key biological component, i.e., polysaccharide, was extracted from fruit by alkaline treatment, and its structural characteristics, physicochemical properties, gelling properties activities were investigated. The findings demonstrated that alkaline-extracted S. polysaccharide (SSP-AK) predominantly exists as a pectic with high rhamnogalacturonan-I domain. monosaccharide composition primarily includes rhamnose, glucuronic acid, galacturonic glucose, galactose, arabinose. molecular weight distribution SSP-AK characterized two peaks, fraction 1 exhibiting 7658 kDa 2 345.3 kDa. Meanwhile, exhibited excellent rheological behavior upon Ca2+-induced gelation, which may be related to relatively low degree esterification 41.3%. Further studies revealed higher concentrations pectin Ca2+ led formation stronger gels. gels superior increased hardness, enhanced water-holding capacity, more compact network structure than other Moreover, significant vitro antioxidant activity immunomodulatory effects, including significantly enhancing DPPH ABTS radical-scavenging abilities production NO, IL-6, TNF-α RAW264.7 cell models.
