Abstract
The
interaction
between
soy
hull
polysaccharide
and
intestinal
mucus
is
influenced
by
different
ions.
This
study
investigates
the
effects
of
various
concentrations
Na
+
/K
on
stability,
interfacial
activity,
viscoelasticity
microwave-assisted
ammonium
oxalate
extraction
(MASP)
in
simulated
fluids
(SIFs)
terms
particle
size,
zeta
potential,
surface
hydrophobicity,
Fourier-transform
infrared
spectroscopy,
shear
rheology,
microstructure.
Results
showed
that
1.5
%
causes
MASP
mucin
SIFs
to
bind
through
physical
adsorption;
average
size
MASP/SIF
miscible
system
increases
from
1,659
1,881
1,736
nm.
When
ion
strength
0.5
%,
rapidly
reduces
SIF
tension.
