Abstract Deterioration of food quality and freshness is mainly due to microbial growth enzyme activity. Chilled fresh food, especially meat seafood, as well pasteurized products, rapidly lose during packing, distribution storage. Real‐time monitoring using on‐package indicator films can help consumers make informed purchasing decisions. Interest in the use intelligent packaging systems for safety has increased recent years. Polysaccharide‐based be developed into their excellent film‐forming properties biodegradability. Another important component colorants with visible color changes at various pH levels. Currently, natural pigments are receiving attention because environmental friendliness. This review highlights findings regarding role pigments, effects incorporating polysaccharides on film, current application limitations based some foods, problems improvement physical conversion film containing development polysaccharide‐based pH‐responsive films. © 2022 Society Chemical Industry.

In recent years, active and intelligent food packaging films have been developing in response to the retailer consumer demands for producing products with controlled quality prolonged shelf-life. Moreover, using biodegradable polymers as environmentally friendly materials is continuously a priority scientists consumers.
