In this study, Shatian pomelo peel was used as the raw material for extracting polysaccharides using hot water extraction (HW) and ultrasonic-assisted enzyme (UVE) methods, respectively. The optimal parameters extractingShatian (StPP) ultrasound-assisted enzymatic method were determined response surface methodology (RSM). conditions of StPP follows: ultrasound power 350 W, time 50 min, digestion compound addition 1.5%, temperature 55 °C. yield found to be 30.1310% under these conditions. Comparing physicochemical properties antioxidant activity extracted different it observed that resulted in higher yield, sugar content glucuronic acid compared traditional extraction. Maesen & S.M.Almeida ex Sanjappa Predeep (P. lobata) is a medicinal herb widely used in the food and pharmaceutical industries, studies have shown that P. possesses significant anti-inflammatory pharmacological activities.
