In cold storage, fruits and vegetables still keep a low respiratory rate. Although storage is beneficial to maintain the quality of some vegetables, several factors (temperature humidity fluctuations, heat inflow, air velocity, light, etc.) will accelerate moisture loss. Biopolymer films have attracted great attention for preservation because their biodegradable barrier properties. However, there certain amount water transfer occurring between environment/biopolymer films/fruits (EFF). The effect biopolymer inhibit loss mechanism in EFF system need be studied systematically. Therefore, crucial properties, major components, fabrication methods, formation mechanisms were reviewed. Further, this study highlights system, responses EFF. This work aims clarify characteristics members, influence on each other, transfer, which conducive improving efficiency purposefully future studies. addition, prospects studies systems are shown.
