The great potential of polysaccharides in immunological regulation has recently been highlighted pharmacological and clinical studies. Polysaccharides can trigger immunostimulatory responses through molecular identification, intra- intercellular communication via direct or indirect interactions with the immune system. This study developed a structured fruit cube (FC) snack using only natural ingredients, specifically red grape and apple, without hydrocolloids sucrose. After development, physicochemical characterization analysis of phenolic compounds (PCs), including anthocyanins, flavonols, hydroxycinnamic acid derivatives, HPLC-DAD-ESI-MS/MS, were conducted. Sensory quality was also assessed through an acceptance sensory profile the rate-all-that-apply methodology. The results showed that FC had characteristics similar to other fruits use hydrocolloids. Additionally, they presented complex composition PCs, predominantly anthocyanins derived from malvidin (tri-substituted methoxylated anthocyanins), notably cumarylated ones. Flavonols comprised 3-glucoside series myricetin, quercetin, laricitrin, kaempferol, isorhamnetin, syringetin; 3-galactoside myricetin quercetin; 3-glucuronic quercitin, along with rutin. presence caftaric acid, coutaric fertaric p-coumaroyl-glucose detected, alongside caffeic acid-O-glucoside 1, 2, chlorogenic 4-O-p-coumaroylquinic dicaffeoylquinic acid. In conclusion, selection ingredients technologically suitable for obtaining FC. Despite conventional drying at 60 °C, product notable concentrations PCs achieved great acceptance.
