Research into extraction kinetics is one of the crucial factors in a technological process. Extraction used predominantly when working with organic feedstock. Acetic acid bacteria (AAB) are a group of bacteria, most which can produce pigments. However, the mechanism pigment production by AAB is unclear. A strain AAB, Gluconacetobacter tumulisoli FBFS 97, large amount brown (BP), was isolated in our previous research. In current study, it found that BP yield 97 enhanced presence tyrosine, and an intermediate melanin, L-3,4-dihydroxyphenylalanine (L-DOPA), identified using ultra-performance liquid chromatography–quadrupole time-of-flight mass spectrometry (UPLC-Q-TOF-MS). The structural properties were analyzed pyrolysis gas chromatography–mass (Py-GC-MS). All these analyses suggest may be eumelanin, type melanin. H2O2, as a signaling molecule, can regulate the formation of cap color, but its regulatory pathway still unclear, severely inhibiting breeding dark-colored strains.
