Purpose This study aimed to investigate the influence of perceived quality by students regarding their experiences in vocational schools tourism, hospitality and food service on cognitive affective responses (satisfaction, self-efficacy expectations self-regulation strategies motivation for learning - SRSML) commitment (behavioural response). Design/methodology/approach A cross-sectional survey was conducted with 454 from twelve Turismo de Portugal IP-affiliated schools. The theoretical framework rooted Self-Determination Theory (SDT) PLS-SEM, using ADANCO 2.3 software test proposed model. Findings Perceived concerning school are socio-contextual factors that directly satisfaction (cognitive responses). Satisfaction positively affected SRSML. Finally, SRSML impacted students` Originality/value contributes academia comprehensively addressing 16 dimensions within education. It aligns SDT, revealing affect students’ cognitive, affective, behavioural responses. Additionally, it demonstrates positive relationships between student satisfaction, expectations, SRSML, education institutions. emphasises multidimensional nature quality, urging educational institutions address tangible intangible develop provide high-quality experiences, increasing motivation, commitment.

The main purpose of this study is to reveal the motivations students who enrolled in undergraduate gastronomy departments Türkiye gastronomy.
