Prickly pear peel (Opuntia ficus-indica) residues can be used as a substrate in solid-state fermentation to obtain bioactive compounds. The kinetic growth of some Aspergillus strains was evaluated. In this study, the characterization of fatty acids and secondary metabolites in seeds three cultivars Opuntia ficus-indica L. (O. ficus-indica, yellow, orange, green) harvested from Souk Ahras area Northeast Algeria was performed. The antioxidant activity seed extracts also assessed by using two methods, namely FRAP DPPH tests. Results show that total phenolic content (TPC) ranged 63.02 to 81.80 mg gallic acid equivalents (GAE)/100 g seeds. yellow cultivar had highest TPC, followed orange green cultivars. Concerning flavonoids tannins, showed higher concentrations, corresponding 2.97 quercetin equivalent (QE)/100 5.60 catechin (CE)/100 g, respectively. Analysis HPLC revealed presence compounds, including chlorogenic acid, while GC analysis oil prickly pear is a major source essential (C18:2). activities were comparable. EC50 for reduction ferric iron almost 0.05 g/mL all extracts. Regarding scavenging DPPH, capacity (EC50 = 0.26 g/mL). Linear correlations between some antioxidants (flavonoids, tannins) different observed, indicating their participation latter. Above all, significant inverse correlation flavonoid calculated reducing observed (r −0.657; p ≤ 0.05). Overall, results indicate O. growing can be exploited as valuable sources table oil, cooking antioxidants.
