The baru is a native Brazilian Cerrado fruit known for its high nutritional and techno-functional value, with the potential to generate new food ingredients. Utilizing entire maximizes use of all components, reduces environmental impact, minimizes waste, contributes region’s sustainable development. In this context, study aimed evaluate composition, bioactive compounds, technological properties, prebiotic by-products nuts, aiming at their integral utilization. Additionally, showed levels potassium (14.05 magnesium (2.20 iron (61.80 g). mesocarp stood out higher total phenolic (157.48 mg GAE/100 g) enhanced water solubility (63.90 g/g). almond flour best absorption (3.62 g/g), oil (3.28 emulsifying activity (71.94%), emulsion stability (87.69%), foaming (8.17%). activity, endocarp fermented by Lactobacillus acidophilus (0.76 log CFU/mL) Bifidobacterium animalis (0.62 presented results. These findings demonstrate have full utilization, contributing development underexplored plant species.
