The processing of beans begins with a particularly time-consuming procedure, the hydration seeds. Ultrasonic treatment (US) represents potential environmentally friendly method for process acceleration, while near-infrared spectroscopy (NIR) is proposedly suitable non-invasive monitoring tool to assess compositional changes. The pH value is an important indicator for determining water quality, and visible near-infrared (Vis-NIR) spectroscopy ideal technique rapid detection.
