Less research has been conducted on the association between camellia oil’s (CO) phenolic composition and antioxidant capability. In this study, profile of CO its connection to capacity were examined utilizing a combination widely-targeted metabolomics multivariate statistical analysis. A total 751 phenolics discovered. The WGCNA was used link phenols antioxidants, yielding 161 antioxidant-related from blue module. response several assays, 59 (FRAP), (DPPH), 53 (ABTS) identified as differential markers (DPMs). Further stepwise multiple linear regression revealed six DPMs that substantially influenced capacities. Nine metabolic pathways their associated network mechanisms for most significant developed. This study sheds light content CO, elucidates role in activity, lays groundwork improving extraction techniques generating improved product.

Addressing the problems of high seed-breaking ratio and difficult seed-shell separation in current mechanical deshelling Camellia Oleifera fruit (COF), this work innovatively proposed a strategy low-temperature airflow-drying cracking coupling with flexible deshelling. The COF reached 100% after at 20–50 °C for 4–10 h. Moreover, tissue structure shell remained unchanged airflow drying. shelling cracked fruits (cracking gap 6 mm) 98.37%, shells present as integrated lamelliform facilitating later sorting. results low-field nuclear magnetic resonance (LF-NMR) shrinkage equation showed that free water outer layers evaporated first, then inner transferred to further evaporate, creating moisture gradient stress cause COF.
