The use of fish rest raw material for the production protein hydrolysates (FPH) through enzymatic hydrolysis has received significant interest in recent decades. Peptides derived from proteins are known their enhanced bioactivity which is mainly influenced by molecular weight. Studies have shown that novel technologies, such as high-pressure processing (HPP), can effectively modify structures leading to increased biological activity. This study investigated effect various HPP conditions on weight distribution, antioxidant activity, and dipeptidyl-peptidase IV (DPP-IV) inhibitory FPH a mixture rainbow trout (Oncorhynchus mykiss) Atlantic salmon (Salmo salar) material. Six different treatments were applied samples before hydrolysis; 200 MPa × 4 min, 8 400 600 min. DPP-IV effects extracted measured both vitro at cellular level utilizing human intestinal Caco-2 cells. results indicated low moderate pressures (200 MPa) proportion larger peptides (2–5 kDa) obtained FPH, while treatment min resulted higher smaller (1–2 kDa). Furthermore, led formation demonstrated activity cells compared control, whereas potential antidiabetic remained unaffected.
