This study aimed to investigate the effects of fermentation on physicochemical properties and in vitro antioxidant activities Glycyrrhiza leaf, compare structures unfermented (GLP) fermented (FGLP) polysaccharides, assess their growth-promoting using zebrafish embryos. The results showed that polysaccharide content, extract yield, reduced sugar content leaf increased significantly after 36 h fermentation. Abstract BACKGROUND Microbial exopolysaccharides represent a significant source of polysaccharides, with their production unconstrained by temporal or spatial limitations. Penicillium , filamentous fungus widely recognized for its medicinal food applications, is known to produce that exhibit cancer‐inhibitory properties. RESULTS In the present study, from EF‐2 (EPS) were extracted and structurally characterized using ion chromatograph, infrared spectroscopy NMR. The in vitro antioxidant immunomodulatory activities also investigated. EPS has molecular weight 111.47 kDa, primarily composed mannose, glucose galactose, possesses crystalline region, exhibits excellent thermal free radical scavenging assays, demonstrated robust activity. Furthermore, activated mitogen‐activated protein kinase pathway, enhancing capacity macrophages. The shaddock peel polysaccharide (SPP) has various biological activities. This explored its antioxidant activity. In vitro tests, the two SPP components showed good DPPH, hydroxyl radical scavenging ability and anti-lipid peroxidation ability. At a concentration of 3.2 mg/mL, abilities polysaccharides were 21.65% 18.96%, respectively. SPP-3 had slightly stronger to scavenge radicals than SPP-2. When reached order polysaccharides' DPPH rates was SPP-2 > SPP-3. Therefore, strong activity could be used in antioxidant-related applications future.
