Pseudomonas fluorescens, a specific spoilage organism, can control cell density and various physiological processes through quorum sensing (QS). Quorum inhibitors (QSIs) are crucial strategy for enhancing food quality safety. In this study, benzyl isothiocyanate (BITC) at subminimum inhibitory concentrations (MICs) promoted protein nucleic acid leakage, β-galactosidase activity the relative fluorescence intensity of membrane potential in P. fluorescens. N-butyryl-l-homoserine lactone (C4-HSL) N-decanoyl-l-homoserine (C10-HSL) were detected fluorescens by ultra-performance liquid chromatography-mass spectrometry (UPLC-MS/MS). C4-HSL C10-HSL known to orchestrate QS gram-negative bacteria. The inhibition rates BITC 1/2 MIC 54.0%–96.2% 31.6%–70.5%, respectively, after cultured with 6–24 h. effects 1/4 on biofilm formation, extracellular polysaccharide production, motility enhanced presence exogenous C4-HSL. Moreover, sub-MICs markedly downregulated expression QS-related genes, molecular docking results also showed excellent binding ability proteins.
