Eating less meat when dining out can help mitigate climate change. Plant-based meats facilitate the transition to a more environmentally sustainable tourism sector. However, uptake of these products remains low. Building on capability-opportunity-motivation behaviour model, this study identifies main reasons for general population restaurant patrons reject plant-based meats: they prefer and traditional vegetable dishes; are concerned about not enjoying perceive dishes as too expensive. Accounting heterogeneity among diners leads identification six distinct consumer segments, which differ in their ordering restaurants. From empirical insights, we derive recommendations professionals how entice specific segments order identify future avenues research.

Agri-food global value chains (GVCs) are failing to provide healthy and affordable diets within planetary boundaries. Many cutting-edge technologies being developed address the sustainability challenges throughout agri-food GVCs. While several studies seek analyze impacts of specific innovations on socioeconomic environmental dimensions, relationship between industry structure process technological change has not received much attention in chain literature. Here, we focus entrepreneurial landscape innovation GVCs 1) identify which have been receiving most support from investors 2) corporate strategies largest multinational companies regarding their investments new technologies. Using Crunchbase as our primary data source machine learning for natural language processing, identified around 15,500 developing linked GVCs, farming last-mile delivery. The field of urban agriculture has seen an increase in development and attention recent years, with a large share literature addressing whether may pose solution for food insecurity combat environmental impacts. However, few studies have examined the many sustainability claims systems, especially farms intended larger output commercial ends. In this study, we analyze assessments implementation. We do by exploring methods employed conducting analyses, outlining different cultivation analyzing which aspects are considered, looking into what analyses conclude, studying how authors anticipate knowledge gained from their can be used. Environmental were more often assessed than other aspects, LCA research practice was used majority assessments. Some compared benefits types but not conclusive overall as to systems would environmentally beneficial. This suggests that agriculture’s cannot universally categorized should relation specific conditions contexts.
