Ulcerative colitis (UC) has experienced a steady increase in global incidence and prevalence recently. Current research into UC pathogenesis focuses on the complex interplay of genetic environmental factors with immune system gut microbiome, leading to disruption intestinal barrier. Normally, epithelium, interact maintain homeostasis. However, when this equilibrium is disturbed, harmful cycle dysbiosis, dysregulation, inflammation emerges, resulting barrier dysfunction progression. Among various risk factors, diet significantly influences epithelial integrity architectural stability through both direct indirect mechanisms, shaping entire continuum from pre-clinical prevention active phase treatment remission maintenance. This review provides insights impact dietary content eating behaviors UC, focusing specific food, food groups, nutrients, intermittent fasting, while providing detailed explanation why microbiota may mediate sustained effects across all stages UC. The incidence of ulcerative colitis (UC) is increasing annually. There are few treatments for UC patients, and some drugs have serious side effects. Sea cucumber peptide (SCP) has anti-inflammatory, antioxidant other biological activities, various sea species in pharmaceutical development. Background/Objectives: Lactobacillus strains are widely used as probiotics in the functional food industry and show potential for treating inflammatory bowel disease (IBD).
