Currently, it is going through a period transition new government law that recently allows cultivation, transformation, and commercialization such plant species. In this sense, identification strategies for valorization products or by-products from Cannabis sativa represent great opportunity to improve value chain crop. Hemp seed-derived inhibitors of dipeptidyl peptidase IV (DPP-IV) demonstrate potential as novel therapeutics for diabetes; however, their proteome and genome remain uncharacterized. We used multi-omics technology to mine peptides capable inhibiting DPP-IV. First, 1261 1184 proteins were identified in fresh dry hemp seeds, respectively. Simulated protease cleavage seed yielded 185,446 virtual screening select the DPP-IV-inhibiting peptides. Sixteen selected according DPP-IV-binding affinity determined via molecular docking. This study analyzed the flavor of six types hemp seed oil (HSO) extracted with roasted (RHS) under various conditions (Raw, 140 °C_9 min, °C_12 160 180 °C_6 min). Electronic tongue (E-tongue), electronic nose (E-nose), GC-MS (gas chromatography-mass spectrometry), and GC-O chromatography-olfactometry) were used for HSO analysis. As a result E-tongue analysis, sweetness tends to increase in most samples as roasting.
