Moringa oleifera Lam. leaves are a new raw food material rich in polysaccharides. These polysaccharides exhibit various biological properties, including antioxidant, hypoglycemic and immunoregulatory effects. However, the use of (MOLP) may be limited by their large molecular weight (MW) presence numerous impurities, such as pigments. Research has indicated that degraded usually high activity because changes physical structure chemical properties. In this study, we focused on extraction degraded-modified fraction from MOLP using Ultraviolet/ Hydrogen peroxide (UV/H2O2) method. Specifically, physicochemical properties glycosidic bond composition particular (UV/H2O2 3 h called DMOLP-3) were investigated. addition, vitro simulated digestion experiments showed DMOLP-3 was only partially during gastrointestinal digestion, indicating can utilised gut microorganisms. Furthermore, prebiotic studied an faecal fermentation model. The results compared with MOLP, led to decrease both colour MW model exhibited enhanced solubility antioxidant capabilities while also influencing surface morphology. Moreover, facilitate proliferation advantageous microorganisms enhance synthesis short-chain fatty acids (SCFAs). provide valuable insights into utilization bioactive components for intestinal health.
