Prickly pear consumption is increasing across the world due to its rich variety of nutrients and bioactive compounds. Yet, it a seasonal highly perishable fruit, application edible coatings emerges as an alternative extend shelf life. In this work, effects alginate, starch, chitosan, pectin on physicochemical, bioactive, microbiological, textural properties two prickly varieties (orange red), kept under refrigeration (5 ± 2 °C) were evaluated for 6 weeks. Coatings proved be helpful in maintenance fruits' color properties, especially when was applied. Overall, starch chitosan can considered most effective preserving quality pears among options studied. A lower weight loss (8-10%) fruits achieved applied, while control (without coating), 18-23%. Summary Food retail strategies to improve the healthiness of food and beverage options may increase purchasing healthier diets. Consumer demand for is an important determinant successful implementation maintenance healthy interventions. The current study examines the impact of health claims on consumer preferences and willingness to pay (WTP) for functional snack bars, focusing anti-inflammatory antioxidant properties. This study evaluated the nutritional composition, techno-functional properties, and sensory acceptance of tortilla chips made from alternative flours derived local ingredients, including maize, beet, flaxseed, bean, chia. Three blends were assessed: maize with beans, chia-flaxseed. Significant differences (p < 0.05) observed in flours' moisture, ash, protein, lipid, mineral content. Flaxseed flour exhibited highest protein content (40.03 g/100 g), while chia was notable for its lipid (32.25 g) fiber (38.51 Bean rich iron zinc. Abstract Supercritical carbon dioxide (SC‐CO 2 ) has emerged as a nonthermal technology to guarantee food safety. This review addresses the potential of SC‐CO in preservation, discussing microbial inactivation mechanisms and impact on products’ quality parameters bioactive compounds. The EU Farm to Fork strategy (F2F) promotes the compulsory adoption of a nutritional front pack label improve diets citizens, supporting healthier food choices. Although being widely supported, oppositions on political and producer levels are raised against NS, due economic impact it could have specific sector, specifically Geographical Indications (GIs).
