Abstract
Organometallic
complexes

In
this
study,
menthol
was
glycosylated
with
starch
in
the
presence
of
α-amylase
to
produce
menthyl
maltoside
(MenM)
as
primary
product.
Optimization
experimental
parameters,

menthol-starch
ratio,
enzyme

temperature,

time,
performed
using
response
surface
methodology
