Ophiocordyceps sinensis is a fungus that cultured through fermentation from wild Chinese cordyceps. While studies have examined its metabolites, the evaluation of antioxidant capacity remains to be conducted. The results O. indicate ferric ion-reducing power (FRAP), (2.74 ± 0.12 μmol Trolox/g), 2,2-diphenyl-1-picrylhydrazyl (DPPH•) free radical scavenging rate (60.21 0.51%), and hydroxyl (91.83 0.68%) reached maximum on day 30. Using LC-MS/MS measure metabolites D24, D30, D36, we found majority differential accumulated (DAMs) primarily accumulate in lipids, organoheterocyclic compounds, organic acids their derivatives. Floccularia luteovirens (F. luteovirens) has garnered increasing attention as an ingredient in both the pharmaceutical and food industries. Depending on drying method, accumulation of metabolites can greatly affect quality. This research employed untargeted metabolomics (LC-MS/MS) strategy to elucidate similarities differences morphological characteristics, microstructure, antioxidant capacity, metabolic profiles F. subjected three distinct methods: natural air-drying (YG), oven-drying (HG), vacuum freeze-drying (DG). Our findings indicated that color samples dried using YG HG methods was yellow-brown, exhibiting a high degree browning, whereas processed by DG method displayed golden-yellow hue desirable fullness. The significant demand for medicinal plants with special efficacy has prompted us to adopt appropriate processing methods enhance the nutritional quality and flavor of raw materials. This study evaluated impacts freeze-drying (FD), hot-air drying (HAD), spray (SD) on bioactive compounds, characteristics, inhibition starch digestion in mulberry leaf ethanol extract (MLE). Results indicated that FDMLE exhibited highest total alkaloids content (TAC: 0.14 ± 0.02 mg/g) flavonoid (TFC: 19.32 0.58 mg/g), along inhibitory effects hydrolysis at 180 min (starch rate <50%). microstructure HADMLE was closest powder (ML), but SD better preserved color ML (ΔE = 1.55 0.04). Combined electronic nose gas chromatography-ion mobility spectrometry (GC-IMS) found HAD facilitated conversion precursors into Ethyl formate, rose oxide, (Z)-3-hexenol (M). Extraction is the core process for obtaining bioactive compounds from medicinal plants. Enhancing extraction efficiency of aromatic herbs has become a critical challenge. This study introduced novel freeze-pressure regulated (FE) technique to improve Gui Zhi (GZ). Compared traditional methods, FE yielded significantly lower pH 4.74, higher zeta potential −13.93 mV, and smaller average particle size 304.57 nm. Scanning electron microscopy (SEM) mercury intrusion porosimetry (MIP) confirmed that creates larger pores an expanded surface area, facilitating more effective compound release. HPLC analysis indicated increased cinnamaldehyde content 348.53 370.20 μg/g. UPLC-MS further demonstrated extracting volatile phenolic compounds.
