Growing interests in replacing conventional preservatives and antibiotics food pharmaceutical industries have driven the exploration of bacterial metabolites, especially those from strains with generally recognized as safe (GRAS) status, such lactic acid bacteria (LAB). In this study, a supernatant cocktail derived multiple LAB was prepared its bioactivities—antimicrobial, antibiofilm, antioxidant, cytotoxicity, stability—were thoroughly investigated. The cocktail's main components were identified using thermal protease treatments, gas chromatography coupled to mass spectrometry (GC–MS), flame ionization detection (GC-FID). results demonstrated that had broad inhibition spectrum effective against food-related indicators highest activity observed on Bacillus cereus ATCC9634 (inhibition zone sizes 12.33 mm) lowest Enterococcus faecium DSM 13590 (3.31 mm). It showed dose- time-dependent delaying effects growth tested fungi. Regarding antibiofilm activity, it more preventing biofilm formation (40% reduction) than degrading preformed (20% reduction). Abstract Non-alcoholic fatty liver disease (NAFLD) is a primary chronic ailment around the world, posing significant threat to human health. This study aimed identify probiotics with excellent antioxidant capacity from naturally fermented foods, investigate their potential mechanisms in relieving high-fat diet (HFD)-induced injury modulating balance. These findings fundamentally benefit advancement of functional probiotic foods. Lactobacillus fermentum KP101, isolated kimchi, was evaluated for its activity. Assessment HFD-induced based on biochemical markers, protein expression levels, histopathology. L. KP101 remarkably reduced mice serum levels TC, TG, LDL, ALT, AST. intervention effectively modulated dyslipidemia activated AMPK signalling pathway alleviate injury. Specifically, SREBP-1 p-ACC presented an obvious reduction, while p-AMPK PPARα notably increased following treatment. Moreover, mitigated dysbiosis HFD-fed mice. In summary, demonstrated efficacy improving hyperlipidemia metabolic disorders conditions.
