Among the Brassica oleracea L. crops, kale has gained increased global recognition in recent years as a healthy food item due to its high nutritional value and versatility. Additionally, diversity of different varieties started be explored across large latitudes from Mediterranean north temperate climates. Specifically, glucosinolates are predominant phytochemicals found leaves, contributing specific taste this vegetable, they affected by environmental factors such temperature. To date, no study investigated effect chilling on glucosinolate and, thus, genetically cultivars at same time. Given variability observed among cultivars, we evaluated impact acclimation cold temperatures levels curly kale, Lacinato feral type using high-performance liquid chromatography coupled with time-of-flight mass spectrometry (HPLC-ESI-qTOF-MS).
