Background: This work aimed to perform a comprehensive investigation of organic Moroccan honeys obtained from plants euphorbia, arbutus, and carob, based on the determination physico-chemical profiles volatile fingerprints. Ethanolic extracts of propolis and bee honey contain substances beneficial to human health.
