Abstract This study aimed to estimate the proline and Brix content of honey based on color properties. In study, 20 samples from Türkiye were used, which determined using IHC method refractometer. Honey, a natural product with rich history of medicinal use, has gained increasing recognition for its potent antimicrobial properties, particularly against antibiotic-resistant pathogens. This review focuses on the mechanisms honey, including efficacy resistant bacteria, such as Methicillin-resistant Staphylococcus aureus and Pseudomonas aeruginosa. Physical activity creates an imbalance between the production of free radicals and body's antioxidant defense system, known as oxidative stress. increases need for oxygen, improving radical products. Thus, causing increased levels malondialdehyde (MDA), glutathione (GLU), superoxide dismutase (SOD) can be overcome by consuming honey that contains antioxidants. This study aimed to determine effect administration on physical MDA, GLU, SOD blood in male Wistar rats. Rats were then divided into 5 groups: healthy control, negative M1 3 (giving 2.0, 2.5, 3.0 g/kg BW (gram per kilogram body weight) twice weekly 8 weeks). High-intensity swimming exercises performed 1 h/day, days/week weeks. According manual kit, carried out ELISA method. Administration significantly decreased MDA level (49.18 ± 0.74 ng/mL) (132.43±10.30 pg/mL) compared all groups (p < 0.05). The GLU but no significant > 0.05) difference existed groups. This study evaluates the physicochemical properties, phenolic and flavonoid content, antioxidant activity, molecular docking interactions of honey from eastern Morocco. Analysis confirmed compliance with European Commission standards, moisture content ranging 15.39% to 19.74% pH between 3.79 4.94. Carob exhibited highest protein (0.42%), polyphenol concentration (720.16 mg gallic acid/kg), (90.5 catechin/kg), activity (63.5% DPPH inhibition). Strong correlations were observed properties.
