Introdução: Os hidrocarbonetos policíclicos aromáticos representam uma classe de cerca 200 compostos, e são contaminantes orgânicos formados por anéis condensados (Khalili et al., 2023). São conhecidos pelas propriedades mutagênicas carcinogênicas, sendo o benzo(a)pireno (BaP) conhecido como principal composto carcinogênico classificado no grupo 1 da Agência Internacional Pesquisas em Câncer (IARC, 2010, 2012). humanos estão expostos aos HPAs através diversas vias, os alimentos a com 88–98% exposição total (Samiee 2020). A contaminação dos alimentos, especial produtos cárneos, irá depender ambiental (presença solo, ar água), ingredientes utilizados na fabricação (diferentes carnes, gorduras, temperos outros), processamento industrial (secagem defumação) cozimento (Silva O Regulamento nº 835/2011 Comunidade Europeia estabelece limites BaP para soma 4 (benzo(a)pireno BaA, criseno Cri, benzo(b)fluoranteno BbF BaP) carnes defumadas valores respectivamente 2,0 12,0 ?g/kg (CEC, 2011). Objetivo: Avaliar salsichas hambúrgueres quanto à HPAs. Metodologia: Foram analisadas 20 amostras salsicha hambúrguer, dez cada tipo, diferentes marcas lotes, obtidas junto diversos estabelecimentos comerciais cidade Paulo. Para análise HPAs, metodologia foi descrita Silva al. (2023). Dois gramas amostra triturada homogeneizada foram saponificados hidróxido potássio etanólico 2M (40ºC 3 h), seguido pela extração líquido-líquido n-hexano. Traditional meat products that are smoked may pose health risks due to polycyclic aromatic hydrocarbons (PAHs). Recently, concerns have grown about the implications of under traditional, uncontrolled conditions. This study investigated the effects of different fat contents and cooking techniques on presence PAHs in chicken doner kebabs, as well dietary exposure potential health risks for Turkish population. Circadian disruption has been found to increase the risk of metabolic diseases, brain disorders, and cancer. The aryl hydrocarbon receptor (AhR), responsible for xenobiotic metabolism, is known be activated by certain environmental stimuli, including polycyclic aromatic hydrocarbons (PAHs). Although bread is the principal food in most countries, polycyclic aromatic hydrocarbons (PAHs) may be present and pose a potential risk to consumers. The aim of this review provide comprehensive report on concentration health risks associated with PAHs around world. Various databases, such as Scopus, PubMed, Science Direct, Google Scholar, were searched from their beginnings until December 2023 for systematic review, which included 34 potentially relevant articles data relating 1057 samples. Utilizing multilevel regression modeling approach, study evaluated various factors fuel type, geographical location.
