Background.Common whitebeam, Sorbus aria (L.) Crantz is an European and Near-Eastern deciduous tree with small red fruits.However, the edible use of this forest fruit currently not widespread.Also, its nutritional antioxidative properties remained undiscovered.In study, chemical composition antioxidant common whitebeam were investigated.Materials methods.The collected from Golo Bardo Mountain in Bulgaria.The phytochemical (carotenoids, phenolic compounds, flavonoids), (moisture, ash, titrable acidity, lipids, proteins, pectin, carbohydrates) activity evaluated by four assays (DPPH, ABTS, FRAP, CUPRAC).Results.Sugar analysis demonstrated that only fructose glucose detected fruit.Pectin content did exceed 1.30%.Moreover, had a low lipid (0.80%).The also characterized as source carotenoids (1.69 mg/100 g fresh weight, fw), compounds (32.42 mg GAE/100 flavonoids (20.08 QE/100 fw).Among acids, 2,4-dihydrohybenzoic, caffeic, p-coumaric, sinapic acid detected.The potential was 168.52 mM TE/100 fw (FRAP) to 244.81 (CUPRAC assay). Conclusion.The current research enriched available information about their sugar content.The absence sucrose, together high content, for future application food products supplements.

In recent years, there has been increasing interest in studying food-originated phytocompounds with beneficial influences for humans. Ultrasound with water as a green solvent is an effective strategy for reducing losses and increasing the utilization of by-products. The extraction proteins specialized plant metabolites from sugar beet leaves (Beta vulgaris subsp. var. altissima) promotes sustainability in agro-food chain. Guided by sustainability, samples treated ultrasound showed lower energy consumption CO2 emissions. Furthermore, spectrophotometric determination revealed higher protein phenol yields ultrasonically compared to thermally ones. highest yield total proteins, 147.91 ± 4.58 mg (gd.m.)−1, was observed during treatment (amplitude 100%, time 9 min). Under same conditions, trend phenols 17.89 0.38 (gd.m.)−1. High-power ultrasound, thermal method, has increased significantly obtained results are accordance foundations sustainable development.
