Differences in the oral responsiveness to bitter compound 6-n-propylthiouracil (PROP) between taster (T) and non-taster (NT) individuals have also been related differences long-lasting wine astringency perception, which could be linked dynamics of salivary protein profile upon stimulation, depending on individual PROP taste status (PTS). To check this, time-course changes early (30 60 seconds) after stimulation with a red (CRW) same tannin-enriched (TRW) Ts NTs (young women) were tested by using an untargeted proteomic approach. Results showed that exhibited more pronounced (measured as ratio abundance before stimulation), compared NTs, including proteins such cystatins (SN, S, SA D), α-amylase, prolactin (PIP), carbonic anhydrase VI (CA-VI) acid proline-rich (aPRP). Flavan-3-ols (FLs), astringent polyphenols, are known to have low bioavailability and induce excessive sympathetic nervous system activation. This study aimed compare the effects of FLs on brown, subcutaneous, visceral adipose tissue in mice. C57BL/6J male mice fed a standard or high-fat diet were given water 50 mg/kg FL orally by gavage for 2 weeks. Excised inguinal, epididymal fat tissues prepared frozen sectioning. After hematoxylin eosin (HE) staining, administration each observed, expression analysis mitochondrial DNA genes was performed. Repeated had no morphological brown fat. However, significantly reduced cell size subcutaneous induced appearance multilocular structures. Furthermore, increased cytochrome B The results showed that browning FL-induced enhancement nerve activity mitochondria promoted browning. changes observed other tissues. Abstract Mitochondria-derived reactive oxygen species production at a moderate physiological level plays fundamental role in the anti-aging signaling, due to their action as redox-active sensors for maintenance of optimal mitochondrial balance between intracellular energy status and hormetic nutrients. Iron regulatory protein dysregulation, systematically increased iron levels, dysfunction, consequent oxidative stress are recognized underlie pathogenesis multiple neurodegenerative diseases, such Parkinson’s disease Alzheimer’s disease. Central pathogenesis, Nrf2 signaling dysfunction occurs with disruption metabolic homeostasis. We highlight potential therapeutic importance nutritional polyphenols substantive regulators pathway. Here, we discuss common mechanisms targeting Nrf2/vitagene pathway, novel strategies minimize consequences neuroinflammation, generally associated cognitive demonstrate its key neuroprotective anti-neuroinflammatory properties, summarizing pharmacotherapeutic aspects relevant brain pathophysiology.

Cocoa (Theobroma cacao L.) is the basic raw material to produce chocolate and other derivatives such as cocoa butter, powder liquor (cocoa paste), which requires a fermentation process that affects its chemical composition sensory profile. The objective of this study was monitor biochemical, physical changes during beans in bean processing plants department Caquetá, Colombia. During fermentation, temperature mass pH pulp were monitored at different (Sites ASOACASAN ASA, COMICACAO CMI, COMCAP COC). Also, two points (days 4 7), properties determined, variables related bromatological composition, polyphenolic compounds antioxidant activity attributes sites. An increase dough found, however cotyledon decreased fat moisture content varied with time. At site level, total polyphenol (TPC), flavonoids (TF), 1,1-diphenyl-2-picrylhydrazil (DPPH) ferric reducing power (FRAP) contents statistically different, COC being from TPC higher (507 mg gallic acid equivalent GAE/g Cocoa) respect sites (< 360 Cocoa). TF followed similar behavior TPC, significant differences between times for ASA. (309.1 catechin/g cocoa) CMI (215.6 ASA (185.7 cocoa). Values DPPH ranged 5869.3 7781.8 μmol Trolox/g FRAP assay 369.8 606.7 ascorbic AA/g among It found time management has impact on parameters (biochemical, sensory) beans. Therefore, it necessary standardize achieve quality product meets needs market.
