Oyster mushrooms (Pleurotus spp.) are a nutrient-rich functional food, packed with protein, fiber, and bioactive compounds, offering broad range of therapeutic qualities. This paper reports the findings in terms crude total polyphenols, flavones, some phenolic compounds along antimicrobial antioxidant activities Pleurotus extracts: P. eryngii, ostreatus, columbinus. The integration brewery-spent grains (BSG) into nutrient media culture substrate induced major statistical increase (p < 0.05) for chlorogenic caffeic acids as well activity. lowest inhibition concentration IC50 was recorded followed by eryngii Among strains, only ostreatus columbinus exerted activity against two pathogens: Staphylococcus aureus Streptococcus pyogenes. These results add provide evidence oyster mushrooms’ nutritional properties possible positive effects on human health.
