Protein-based hydrogels have attracted growing attention for pharmaceutical and biomedical applications. Ovalbumin (OVA), the hen egg white albumin, possessing good foaming gelling properties being widely used in food industry, has recently been indicated as a potential vehicle. In this study, binding release of pure OVA were investigated by electron paramagnetic resonance (EPR) spin labeling. The comparative analysis between serum albumin (SA) revealed same kinetics hydrophilic 3-carbamoyl-proxyl 3-carboxy-proxyl, suggesting diffusion-dominated small probes from both hydrogel types. results obtained with amphiphilic 16-doxylstearate (16-DS) indicate that OVA, unlike SAs, does not possess specific fatty acid site. However, able to accommodate two-fold excess 16-DS, resulting protein thermally induced conformational changes, confirmed Raman spectroscopy. Similarly, hydrophobic modified paullone ligand HL, which was initially free solution, bound hydrogel. found retain significant amount 16-DS HL after 7-day dialysis physiological saline. observed facilitated amphiphilic/hydrophobic molecules compared their sustained release, demonstrate applicability pharmaceutics.
