Severe allergic reactions to certain types of meat following tick bites have been reported in geographic regions which are endemic with ticks. This immune response is directed a carbohydrate antigen (galactose-α-1,3-galactose or α-Gal), present glycoproteins mammalian meats. At the moment, asparagine-linked complex carbohydrates (N-glycans) α-Gal motifs and cell tissue morphologies these moieties meats still unclear. In this study, we analyzed α-Gal-containing N-glycans beef, mutton, pork tenderloin provided for first time spatial distribution various samples. Terminal α-Gal-modified were found be highly abundant all samples (55, 45, 36% N-glycome pork, respectively). Visualizations modification revealed that motif was mainly fibroconnective tissue.
