Animal toxins are proteins, peptides or metabolites that cause negative effects against predators, prey competitors following contact injection. Severe allergic reactions to certain types of meat following tick bites have been reported in geographic regions which are endemic with ticks. This immune response is directed a carbohydrate antigen (galactose-α-1,3-galactose or α-Gal), present glycoproteins mammalian meats. At the moment, asparagine-linked complex carbohydrates (N-glycans) α-Gal motifs and cell tissue morphologies these moieties meats still unclear. In this study, we analyzed α-Gal-containing N-glycans beef, mutton, pork tenderloin provided for first time spatial distribution various samples. Terminal α-Gal-modified were found be highly abundant all samples (55, 45, 36% N-glycome pork, respectively). Visualizations modification revealed that motif was mainly fibroconnective tissue.
