The most crucial component of every food product is its color, which increases acceptability and attractiveness. Synthetic colorants have gradually been replaced with natural-derived alternatives as a result consumer perception demand. Natural colors variety health benefits, including antioxidant, anti-cancer, anti-inflammatory properties. come from sources, plants, microbes, animals/insects, minerals. Many plants contain pigments, are responsible for their natural hues. Chlorophyll (green), carotenoids (orange, yellow), anthocyanins (red, blue, purple), flavonoids among these pigments purple). give animals insects hues well. Carotenoids found in the feathers, scales, fur many birds, fish, reptiles. Microorganisms that create such bacteria fungus, also orange, yellow, red generated by microorganisms, algae.
